VEGAN BLUEBERRY PANCAKES
- 11/4 cup of Sain Almond Milk of your choice
- 11/4 cup of all-purposeflour
- 2 tablespoon of sugar
- 11/2 teaspoons of baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon of cinnamon
- 1 table spoon of cocounut oil, melted
- 1 banana, mashed

1 cup of fresh/frozen blueberries, plus extra for
topping - Pure maple syrup
DIRECTIONS
HOW TO prepare?
In a large mixing bowl, sift together the flour, sugar, baking powder,
salt and
cinnamon.
In a medium bowl, mix together the almond milk, coconut oil, and
mashed
banana.
Make a well in the middle of the dry ingredients and pour in the wet
ingredients.
Mix in the blueberries and gently stir well. Heat a pan in a medium heat.
The trick with these pancakes to cook them to over a medium-low heat
for a
long period of time, ideally 4-5 minutes on each side,
Once all done, top it
with more blueberries with oodles of maple syrup.
