VEGAN BLUEBERRY PANCAKES

  • 11/4 cup of Sain Almond Milk of your choice
  • 11/4 cup of all-purposeflour
  • 2 tablespoon of sugar
  • 11/2 teaspoons of baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon of cinnamon
  • 1 table spoon of cocounut oil, melted
  • 1 banana, mashed
  • 1 cup of fresh/frozen blueberries, plus extra for
    topping
  • Pure maple syrup

DIRECTIONS

HOW TO prepare?

In a large mixing bowl, sift together the flour, sugar, baking powder, salt and
cinnamon.

In a medium bowl, mix together the almond milk, coconut oil, and mashed
banana.

Make a well in the middle of the dry ingredients and pour in the wet
ingredients.

Mix in the blueberries and gently stir well. Heat a pan in a medium heat.

The trick with these pancakes to cook them to over a medium-low heat for a
long period of time, ideally 4-5 minutes on each side, Once all done, top it
with more blueberries with oodles of maple syrup.
